Hi, folks! You wanna know what's going on? Let me tell you the story of Rayman!
Rayman is a 2D platformer about the eggplant man who goes on a storied quest to save his world from the evil Mr. Dark. Rayman is a vibrant beast - it's almost as if someone plugged a controller into a painting. The PlayStation, Saturn, and DOS versions have a ton of subtle differences from the Jaguar version, such as CD audio and an actual intro sequence, although their alterations to the controls and level design turn an already demanding game into an infamously difficult nightmare.

Unused Animations
Rayman's convoluted platform-hopping meant that content was often left in the game and then deleted across platforms. Sometimes there's a animation only in the PC version, other times in the console versions, occasionally they're left inside the files of Rayman Designer (a official level editor), etc.
An unused death animation of Rayman collapsing. There's leftover code for it in the PlayStation and Sega Saturn versions indicating that it could only be triggered when standing on solid ground. The code was later removed in the DOS version.

This... lovely thing is an unused graphic for a gate. The file name for the graphic is "POR", short for the French word portail.
Regional Differences
Sound Effects
The Japanese version of this game has different sound effects exclusive to the PlayStation version (the Sega Saturn release uses the original sound effects). Like the DOS version, the text "Loading" has been added to the loading screens, and also you can control and skip Betilla's tutorials.

Text and Translation
For each Japanese release, in contrast to the Japanese DOS and Sega Saturn ports, the PlayStation version does not have text for Betilla's dialogue. However the Saturn release leaves the text untranslated from the English version whereas the DOS version has the text translated to Japanese.

When Rayman was ported from the PlayStation to the Saturn, there were several tweaks and changes made throughout the game. Many of these range from special effects to different jingles, and due to the ambiguity between them, many online uploads of Rayman's music often mix them up. Further changes were made to the PC port, which is a whole adventure of its own.
Title Screen
The "licensed by" information at the bottom was changed for their respective consoles.
The Saturn port shows a conversion of the Atari Jaguar Rayman's title screen animation. The PlayStation port does not show it by default, but it can be triggered as an easter egg by holding L2 + R2 at the Presents screen.

Sound Effects and Jingles
By far the easiest thing to point to would be the differences of the "YEAH!" finish jingle. While the original ended with a gleam, the Saturn arrangement extends the jingle with a bit of a rock flair to it. Like the dancing Rayman, it is in the PlayStation port, but it's only used in the Japanese version, where it is unusually stored as part of the game's music library rather than part of the sound effects library.
