Within 'content\models' in Wii Fit U's files are a plethora of unused models, many being earlier versions of used models or leftovers from Wii Fit Plus.
Character models
Wii U Shirt
A Mii outfit that resembles the final outfit worn by male Miis in Wii Fit U, however with a color palette not being used by any Mii's favorite color and a colored "U" in the Wii U logo. This model is found in several files.
Circus Costume
The costume worn by Miis in Big Top Juggling in Wii Fit Plus, an activity that did not return in Wii Fit U. It was likely meant to be used for the unused unicycling game.
Placeholder Scuba Search Mii
A pre-modeled Mii in the outfit used for the Scuba Search activity. This Mii was used for demos containing Miis during E3 2011.
Placeholder Rhythm Kung-Fu Mii
Another pre-modeled Mii, this time in the outfit used in Rhythm Kung-Fu. This Mii was also seen within E3 2011 demos. This model is in several files.
Skateboard Arena Mii
The last unused pre-modeled Mii model. This one is in the Skateboard Arena outfit from Wii Fit Plus. For some reason, this model is tiny. Unlike the other two Mii models, this Mii wasn't seen during E3 2011.
Female Trainer
The base of the female trainer model, leftover from Wii Fit Plus as evident by the logo on her top.
Male Trainer
The base of the male trainer model, again leftover from Wii Fit Plus.

Apparently, this is corn.

A cube with a 2x2 red, blue, green and white pattern.
Sphere
A sphere with a checker pattern.
TmpTrampoline
An elevator from Obstacle Course, apparently used as a placeholder for Trampoline Target.
TmpTrampolineBase
This doesn't seem like a structurally sound base for a trampoline...
