Untitled Goose Game is the hit 2019 game developed by the Australian game developer House House and published by Panic Inc. The game is what it says on the tin: you're a goose!
Unused Graphics
Unused Control Diagrams
Within the file sharedassets2.assets are a few images showing mock-ups of control diagrams for a keyboard and mouse, a Nintendo Switch controller, and an Xbox One controller. Two of these seem to be in-game screenshots.
Unused Control Diagram Buttons
Similarly, within sharedassets1.assets there's a file called goosebuttons_v3 SDF Atlas which depicts an older version of the buttons used on the control diagram. These are saved as an image, whereas the ones that are used are stored in a font (called goosebuttons_v4). These graphics are drastically different from the used onesd, showing joysticks being moved left and right, and an icon depicting an entire keyboard.
Unused Models
The file sharedassets2.assets contains many unused models that were either replaced or scrapped entirely.
Groundskeeper's Keys
There is an earlier revision of the groundskeeper's keys, which is fittingly named keyring. The final version of the model replaces the blue keyring with a second key, although both files are still called "keyring".

Phone Booth Door
Similarly, there is an older version of the door to the phone booth in the High Street called phoneDoorProp. The name may suggest that it was only used as a placeholder.

Tidy Neighbor's Slippers
There is also an early version of the Tidy Neighbor's Slippers called slipperR and slipperL (with the same name as the final ones). These can be seen in the GDC 2019 version of the game, and they're replaced with a much simpler design in the final game.

Unused Crown
dontuse_crown is (obviously) an unused version of the crown from the very end of the game. This version doesn't differ much from the used version, aside from the lack of shading and a slightly different color.

There are two unused bell models in the game: one called bellPlaceholder and one called bellideal.

Bows
There are also two unused bow models in the game, one being a placeholder (simply called ribbon) and one being almost identical to the one in the final game, but with thinner tails (both called bow).

Unused Door Models
There is two unused door models which have round door knockers, called doorPulled and doorResting. It's unknown where these would've been used.
Bike Placeholder
The broken bike seen in the starting area of the game has an earlier placeholder version called bikePlaceholder.
Log Placeholder
Also at the start of the game is a log that blocks your path, which has a placeholder model called logPlaceholder.
Unused Text
In StringTables/ there are language files for the game's text, containing various bits of unused text referring to unused missions and removed settings, among other things.
Demo Leftovers
Leftover in the english text file (english.json) is the thank you message from the demo of the game, and the text used for the timer.

There are also references to unused flowers from the collect the five flowers task. There are internally labelled as unused, so they were likely cut without plans to be re-implemented.

Along with the text for timed tasks, there are unused lines which suggest that the church bells were meant to ring after 10 minutes, rather than the 6 minutes used in-game.
