Mario

Mario has multiple unused animation files, including punching and tackling moves like in Super Mario 64. One of the numerous pre-release videos for the game shows that Mario could actually perform his dive attack at the time.
He also has a full set of...tennis moves, for some reason.

It's possible these tennis animations are the same ones used in the prototype build of Wii Sports that featured Mario characters.

Demo Mario

The unused DemoMario model has two animations, which might have been used for the pre-rendered cutscenes. (Demo is Nintendo EAD terminology for cutscenes, not playable demos.)

Bouldergeist

Bouldergeist has a set of animations for a tactic that is seemingly never used in battle: sinking into the ground, peeking with his core, and popping back up. His hands also have a corresponding animation.

Guppy

Guppy has two leftover animations used in the game's pre-rendered "EndingA" cutscene, "endingacut04move01.bck" and "endingacut13move01.bck". These animations were used for Guppy leaping out of the water as the camera sweeps over Peach's Castle.
