Early Opening Narrative
Located in the game's files is an old version of the opening narrative used to illustrate the game's backstory when starting a new file.
Early UI Elements
As is tradition with Sims games, the User Interface undergoes extensive makeovers and retoolings until the final look is achieved. MySims is no exception to that, with a few leftover icons from previous revisions during development.
Character Icons
For whatever reason two unused character icons are left in the game's files that go unused.
Illustrated Icons
Interestingly each of the five Sims that appear in your town from the beginning of the game have unused character icons, however unlike the icons used in-game, these are illustrations rather than renders.
Title Screen Render
On the main menu of the game is a line of renders of the characters from the game that continuously scroll by. However there are renders for an unknown character that never appears in the line-up.
Essence Master's Eyes
There is a collection of unused eyes for the unused Essence Master Sim in the files of the game. These eyes were later used for Marlon in MySims Kingdom on the Wii. Unfortunately they do not work outside of Create-A-Sim. This is because rather than using individual textures for eyes, mouths, and faces, the game uses a "baked" texture with every possible combination in mind during normal gameplay outside of Create-A-Sim. No "baked" texture for the eyes paired with any mouth or face exists, and as a result the eyes do not work when outside of Create-A-Sim.

A texture for a big white beard that would have been used by the Essence Master.
