Earlier Character Switch Icons
Earlier versions of Character Switch icons can be found. The characters depicted on there have notably different designs and looked like they were taken in the game rather than as model renders. From their designs, it looked like they were taken from before or around the first trailer debuted.
Michael looked older, with more notable wrinkles present on his face and greying hair at the sides, which was likely decided after he was originally younger and Hispanic. Trevor looked a lot more cleaner and had no tattoos present on his mugshot. Franklin looks more or less the same, except with a different hairstyle. Chop looked... different, and implied that he originally had a more plump build (which is further evidenced by his official artwork).
Unused HushSmush Profile Images
There are three unused profile images of Michael, Trevor, and Amanda that were intended for the in-game Hushsmush.com dating website.
Inside the game's Language files, you can find messages that would have occurred if the Player would have contacted a person, with these images being sent by text message. These would result in, for example, Michael getting angry after finding out Foxymama was Amanda.
Early Logos

In the file introscrn.gfx there are three early “V” logos that were originally going to appear, dated 2009. Oddly, the first and third logos are edited versions of the logos of the Los Angeles Angels and Oakland Athletics MLB teams.
Also, in /data/cdimages/scaleform_generic.rpf/gtav_online.xtd is the GTA Online beta logo, where "Online" used the Pricedown font. This logo was used in the pre-launch version of GTA Online.
Player Intro Names
There are unused graphics for intro names found in the splashscreens.ytd file, which are named after the playable characters. They seem to be very out-of-place compared to the game's final style and are reminiscent of L.A. Noire. Judging from the internal names, they may have been intended for the Character Switch feature and would show the names of the characters when switched over.
There's also a graphic for Michael Townley, which is Michael's Prologue/real name.
Unused Contact icons
Various unused contact icons can be found in /data/cdimages/scaleform_generic.rpf/. Some belong to the story mode while those with the initials "mp" (Multiplayer) in the name were intended to appear only in GTA Online.

Rampage Textures
In data/cdimages/scaleform_generic.rpf/rampage.xtd there are two unused textures that should appear on screen when doing a rampage. One texture contains the logo with the skull with a red circle, while the other was supposed to appear when passing or failing the rampage.
Other
Some red-colored shapes without a transparent BG in graphics_pc.xtd, which seems to be test textures.In the same texture file is a circle, hexagon, and octagon.
Additionally, there are quite a few cut map icons that hint at scrapped activities, along with placeholder icons from Grand Theft Auto IV. Plenty of final game assets point to the existence of these activities at some point in development, such as private security patrols in the wealthy suburbs and Los Santos being littered with abandoned taco trucks.
In common.rpf/data/glass, there are three high resolution images and three decal tests. It also exists in the Windows version.
