Viola De' Pazzi

An unused NPC and sister to Vieri De' Pazzi who was going to be used for an assassination quest. Unused model animations exist for her in the files.

Piero de' Medici

An unused NPC for the Battle of Forli DLC, he was originally gonna be a target. An unused model and database entry exist for him in the files.

Manfredo Soderini

An unused NPC, repurposed for Assassin's Creed Brotherhood for Christina's missions. An unused model exists.

Unused Capes

There are unused capes remaining in the games files that are later used in Assassin's Creed Brotherhood.

Borgia Cape

The Borgia Cape which is later used in Assassin's Creed Brotherhood has unused placeholder images for a tutorial.

Verizon Cape

This white cape texture is called Verizon in the files which links shares the same name as the bonus skin you can get from tailor shops.

Key

In game during the mission where you obtain the gun and the last contract mission in Venice, you have the opportunity to loot dummies which upon looted yield keys. These keys seem to do nothing. There are textures for them in the files that suggests you would have been able to see them in your inventory.

Unused Text

This text takes place right after the last dialogue shared between Ezio and Minerva at the end of the game, an extended ending that goes unused. This ending differs a little from the start of Assassin's Creed Brotherhood with Rodrigo being killed.

[small, short laugh]

This text was going to be used for an unused mission where Ezio ends up targeting Vieri's sister Viola.
